PARMESAN MACARONI & CHEESE CUPS
INGREDIENTS
- 1 box Good Citizens White Cheddar and Shells
- 1 zucchini, small diced
- 1 white onion, fine diced
- 1 carrot, fine diced
- 3 tbsp butter
- 2 tbsp crushed garlic
- 1 tsp dried thyme
- 1/2 cup parmesan cheese, grated
DIRECTIONS
- Preheat oven to 300°F
- Prepare macaroni and cheese according to instructions on box
- Grease a small cupcake baking tray
- Heat a medium skillet to medium-high heat, add butter to skillet
- Add vegetables and garlic to pan and cook until vegetables are tender
- Season with salt, pepper, and thyme
- Fold cheese and sautéed vegetables into macaroni and cheese
- Scoop macaroni into cupcake baking tray and bake for 20 minutes
- Let the macaroni and cheese bites cool for 30 minutes before removing from the tray
