• 1 box Good Citizens White Cheddar and Shells
  • 1 zucchini, small diced
  • 1 white onion, fine diced
  • 1 carrot, fine diced
  • 3 tbsp butter
  • 2 tbsp crushed garlic
  • 1 tsp dried thyme
  • 1/2 cup parmesan cheese, grated


  1. Preheat oven to 300°F
  2. Prepare macaroni and cheese according to instructions on box
  3. Grease a small cupcake baking tray
  4. Heat a medium skillet to medium-high heat, add butter to skillet
  5. Add vegetables and garlic to pan and cook until vegetables are tender
  6. Season with salt, pepper, and thyme
  7. Fold cheese and sautéed vegetables into macaroni and cheese
  8. Scoop macaroni into cupcake baking tray and bake for 20 minutes
  9. Let the macaroni and cheese bites cool for 30 minutes before removing from the tray
