EGGPLANT PUTTANESCA MACARONI & CHEESE

INGREDIENTS

  • 1 box Good Citizens Shells and Cheddar Cheese
  • 2 ½ Tbsp Butter
  • ¼ Cup Organic Milk
  • 1 Eggplant
  • ½ Yellow Onion, Chopped
  • 1 Jar Pasta Sauce
  • ¼ Cup Green Olives (Halved)
  • ¼ Cup Kalamata Olives
  • 2 Tbsp Capers
  • Red Pepper Flakes
  • 1 Tbsp Olive Oil

DIRECTIONS

  1. Prepare Good Citizens Shells and Cheddar according to instructions on the box.
  2. In a sauté pan, heat olive oil and sauté cubed eggplant, diced onion, green olives and Kalamata olives.
  3. Add pasta sauce to the sauté pan and combine.
  4. Add capers and mix in.
  5. Plate pasta with Eggplant Puttanesca on top.
  6. Sprinkle red pepper flakes over the top.
