CAULIFLOWER MAC & CHEESE CUPS
INGREDIENTS
- 1 box Good Citizens Gluten Free Cauliflower Macaroni & Cheese
- 1 bunch fresh kale, chopped
- 1 tbsp crushed garlic
- 2 tbsp butter
- 1 cup parmesan cheese, grated
DIRECTIONS
- Preheat oven to 300°F
- Grease small cupcake baking dish
- Prepare macaroni and cheese according to instructions on box
- Heat small skillet to medium/high heat
- Add butter to pan, add kale to pan once butter is melted
- Once kale is tender and garlic is golden, fold into the macaroni and cheese
- Then, fold parmesan into macaroni and cheese
- Scoop macaroni into baking pan and place in oven
- Bake for 20 minutes
- Let cool for 30 minutes before removing from pan
