• 1 box Good Citizens Organic White Cheddar & Shells
  • 1 cup sweet green peas
  • 1/2 cup bacon or pancetta, small diced
  • 2 cups gruyere cheese, shredded
  • 2 tbsp butter
  • 1/4 cup Panko breadcrumbs
  • 1/4 cup heavy cream
  • 2 egg yolks


  1. Preheat oven to 325° F
  2. Prepare Good Citizens White Cheddar & Shells according to the instructions on the box
  3. Heat small saucepan to medium heat and melt butter
  4. Add bacon or pancetta to pan and cook until lightly crispy
  5. Add peas to bacon or pancetta and cook until peas are tender
  6. Add pasta to peas and bacon/pancetta mixture
  7. Add cream to pasta and stir until mixture is bubbling
  8. Add gruyere cheese to macaroni, stir until cheese is melted
  9. Add egg yolks and stir until yolks are completely incorporated
  10. Scoop pasta into ceramic baking dish and  top with Panko bread crumbs
  11. Bake for 20-25 minutes or until breadcrumbs are golden and pasta is bubbly
