BACON, BUTTER & BRAISED LEEKS MAC & CHEESE

INGREDIENTS

  • 1 box Good Citizens Organic White Cheddar & Shells
  • 1/2 cup bacon, small diced
  • 1 medium leek, thinly sliced - save 2 tbsp leek greens for garnish (Keep leek greens in ice water to brighten green color)
  • 2 tbsp butter

DIRECTIONS

  1. Prepare Good Citizens White Cheddar & Shells according to the instructions on the box
  2. Heat up a small sauce pan to low-medium heat
  3. Melt butter and place bacon in pan
  4. Cook for 10-15 minutes, stirring occasionally
  5. Stir leeks into butter and bacon and continue cooking until bacon is lightly crispy and shallots are caramelized
  6. Fold leeks and bacon into pasta
  7. Garnish with iced leek greens
